Moroccan Lamb Tagine with Vegetables

📝 Ingredients:

  • 500g lamb shoulder or leg, cut into chunks
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 potatoes, cut into cubes
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 1/2 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 cup fresh cilantro and parsley, chopped
  • Salt to taste
  • 1 cup water

👩‍🍳 Instructions:

  1. In a tagine or large pot, heat olive oil over medium heat.
  2. Add the onions and sauté until softened.
  3. Add the lamb and sear until lightly browned on all sides.
  4. Season the lamb with ginger, turmeric, black pepper, cinnamon, and salt.
  5. Pour in the water, cover, and let simmer on low heat for about 1 hour.
  6. After an hour, add the carrots, potatoes, and zucchini.
  7. Continue cooking until the vegetables are tender and the lamb is fully cooked.
  8. Garnish with fresh cilantro and parsley before serving.
